Italian cuisine from Giuseppe. Recipes. Chickpea mash with shrimps

Saturday evening our Italian friend Giuseppe invited us for one of his famous finger-licking dinners. Normally these events are regarded almost as national feasts and those invited keep their stomachs empty for a couple of days. Giuseppe, instead, spends those days emptying his mind in order to place some freshly invented recipes there, as he likes experimenting in the kitchen almost as much as we like eating the results of his experiments.

This Saturday our menu was as follows:

  • Chickpea mash with shrimps for starters
  • Onion soup as the first dish
  • Codfish in milk sauce with baked potatoes as the second one
  • And there was a delicious light bilberry dessert made by the sweetheart of Giuseppe Tatiana.

So, here goes the first recipe:

Chickpea mash with shrimps

Ingredients (serves 4)

  • 250 g of cooked chickpeas (place dried chickpeas in a bowl of cold water and allow to soak overnight. Drain them afterwards, place in a cooking pot with twice as much water, bring to a boil and then allow to simmer for about an hour)
  • 100 g of tahina paste
  • 50 g of cedar nuts
  • 1 clove of garlic
  • 1 lemon
  • 100 g of precooked shrimps
  • Hungarian paprika
  • Salt
  • 1 table spoon of olive oil
  • Parsley / chive

 

Preparation:

Fry cedar nuts until they become goldish, put them apart and let them cool down. In a large bowl put chickpeas, tahini paste, cedar nuts, and garlic. Squeeze one lemon and poor the juice into the bowl. With the help of a blender mix the ingredients to get a homogeneous mass. Poor  some water if needed. This part of cooking has been all done long before our arrival, so I had nothing to do but trust Giuseppe in his description of the process.

Heat some oil in a frying pan and fry shrimps (shell on) 2 minutes each side.

Spoon some chickpea mash into small bowls, arrange shrimps on top, add a sprig of parsley or chive, drizzle over with Hungarian paprika and serve until guests get bored at the table.
